The Soothsayer sees in the shadows a glass of black vision, indeed. A dark future that’s all in the making. Tempting good folks to share in the deed. What he sees is the old way of brewing with no spices, no voodoo, no spells. Just the grains and the yeast and the ancient black art. Can’t you feel how it darkly compels?

With Soothsayer, we forgo any spicing to explore the art of dark brewing. Simple grains and Ommegang yeast alone portend notes of licorice, coffee and chocolate under a thick tan head.

Lovely Dark & Deep

Lovely, Dark and Deep pours deep black with a tan, creamy mousse-like head. Aromas of roasted malt and coffee with cream, coupled with subtle notes of chocolate and dark fruit from Ommegang’s house yeast prevail. Flavors of rich chocolate milk, and coffee and cream are impeccably balanced with restrained sweetness and hints of roastiness. The finish is silky smooth with a medium to full body.

Brewed with a rich blend of malts including chocolate malt, midnight wheat, and flaked oats, and given a small addition of lactose, Lovely, Dark and Deep has a hint of sweetness and a smooth body. The beer is hopped with Bravo and Styrian Golding hops and Ommegang’s signature house yeast is used in both primary and secondary fermentation.

Rosetta

Ommegang Rosetta pays homage to time-honored Belgian methods of aging and blending fruit beers. Ommegang brewmaster Phil Leinhart partnered with Belgian sister brewery, Liefmans - legendary brewers in the world of sour fruit beers - to create a truly unique blend for Ommegang and U.S. craft beer lovers. Pouring a mahogany-brown with a hint of red, Rosetta offers elegance, depth, complexity, and an intriguing interplay of tartness and sweetness. This is derived from Phil's perfectly balanced blend of Oud Bruin (a tart Flemish brown ale) with Cuvee Brut (a fruity and lively Kriek Beer)

Joemmegang

The beer begins as a malty brown ale, comprised of Belgian aroma, caramel malts, and oats. A bit of lactose adds body and some sweetness, and a heaping helping of cocoa nibs in the whirlpool provides further richness, and a deep chocolaty aroma. Hop aroma is nonexistent, and bitterness is there just to keep the sweetness in check.

We worked with our great friends at Stagecoach Coffee in Cooperstown to come up with a custom coffee blend that complimented our base beer. Sumatra, Papua New Guinea, and French roast form a combination with chocolate, earth, spice, fruit, and light roast characteristics. Following primary fermentation the beer is cold crashed and yeast is removed. Coffee is added to a secondary tank and the beer is circulated through the freshly roasted beans to extract even more flavor and aroma.

Nirvana IPA

Nirvana IPA is kettle-hopped with Bravo, Simcoe, Centennial, Topaz, and Mosaic, dry-hopped with Centennial, Citra, Simcoe and Amarillo and clocks in at 6.5% ABV and 60 IBUs. The flavor is hoppy, juicy and citrusy goodness – without harsh bitterness.

Innovation Manager Mike says the aromas of grapefruit, peach, pineapple and apricot are mouth-watering and the taste is a big citrus smack, rounded and juicy with tropical and floral notes and just a touch of honey malt sweetness.

Available starting 4/21/15 exclusively in NY, NJ, and CT in 12 oz bottles 1/6 bbl and 1/2 bbl kegs.

Spiced Saison - Boulevard Collaboration

Boulevard’s brewmaster Steven Pauwels and Ommegang’s brewmaster Phil Leinhart chose to collaborate on a Saison, a traditional Belgian farmhouse ale. We first brewed two separate batches of beer using our respective house yeasts, and then blended them post-fermentation, allowing both of our yeasts distinctive characteristics to come through.

Brewed with a mixture of pale malt, oats, rye, corn and wheat. Subtly spiced with coriander, lemon and orange peel. Perle was used as a bittering hop, with Safir and Saaz added for aroma. Each of the two batches was fermented with the unique house yeast from our respective breweries. The result is crisp and bready, with bracing hoppiness and a hint of spice lingering in the background. Join us in raising a glass to our new friendship. Cheers!

Upside Brown

What can “brown” do for you? Our latest Brewmaster’s Obsession Series ale turns your world upside down. The use of wild Brettanomyces yeast makes the beer more complex – yet magically more drinkable at the same time. The challenge to tame wild yeast is an obsession that drives our

brewers, and fuels a passion for making great beer.

Upside Brown has a dark amber,deep copper hue with good clarity and a slightly off-white head. Fruit-filled aromas are dominated by pineapple and cherry, rounded out with a touch of farmyard funk. Sweet malt character is balanced by brett tartness with underlying flavors of cherry and dark fruits. Lively carbonation, dry and tart with a medium-light body. Cooperstown Ale

Baseball and beer. Few things are more ingrained in America's psyche than baseball and beer. The histories of both are laden with traditions and transcendence. Rascals and radicals. Celebration and shared experience. Treasured summertime moments with sun on our faces and a beer in our hands. The timeless game defines our past and guides our future.

Lightly golden-straw hue with a lasting thick, white head. Aromas of sweet malt, floral with slight citrus are followed by delicate herbal notes. Faintly sweet giving way to mellow, lightly floral hop flavor and notes of banana and pears from our signature house yeast. Nicely balanced with a clean herbal-hopped finish makes this an enjoyably, quaffable ale.

Available for a limited time in 1/2 barrel and 12oz 4-packs starting June 1st.

FIRE & BLOOD

Named after the motto of House Targaryen, Fire & Blood was inspired by Daenerys Targaryen and her three dragons; Drogon, Rhaegal and Viserion. To celebrate the rebirth of dragons, three different labels have been created, each depicting one of Daenery's feared dragons.

Fire & Blood is a 6.8% ABV Red ale, brewed with pilsner, Cara-60, Midnight Wheat, flaked rye and spelt. Assertive hopping includes CTZ, Styrian Golding and German Tettnang hops. Spiced with de-seeded Ancho chilies. Fire & Blood has a deep, dark red hue with a persistent, creamy, off-white head. Aromas of ripe fruit, raisins, malt & slight spice, followed by a slightly floral and spicy hop character. A fruity, sweetish malt taste gives way to faint drying provided by the hops & rye.

Available in limited quantities in 750ml bottles & 1/6 BBL kegs beginning late March 2014.

Glimmerglass

Author James Fenimore Cooper gave the name 'Glimmerglass' to the beautiful body of water that graces Cooperstown. Nestled between gentle mountains, it reflects any object held up to it, just as it reflects our joy at the arrival of each spring.

Deep straw to light amber in color with a thick, pure white head. The saison yeast strain gives off fruity aromas of pear, apple and slight citrus balanced with a delicate floral hop character and a touch of spiciness. Taste is very clean, with pronounced fruit flavors, delicate bready malt followed by welcomed spicing. Crisp finish with lingering yet subtle notes of yeast and touches of fruity pepper.

Available for a limited time each Spring in 12oz bottles and 1/2 bbl kegs.

Fleur de Houblon

Nothing is more evocative of summer than the beautiful aroma of flowers, and the favored flowers of brewers are hops. Our brand new summer ale, Fleur de Houblon (Hop Flowers), is brewed to bring the many elements of summer into a refreshing and easy-to-drink Belgian-style ale.

Fleur de Houblon is a rich gold color with distinct floral hops in the aroma that follow through in the taste. Whole-cone Bravo hops are used to impart their earthy, fruity, and floral aromas and flavors. The body and flavor are clean and dry, with pleasing complexity and spicy notes from both primary and secondary fermentation with our unique Ommegang house yeast.

Grains of Truth

Grains of Truth is Ommegang’s ale honoring the harvest season. Using barley, oats, wheat, and rye, we’ve brought the mood of fall to life with vibrant and flavorful passion.

Farming is about precision, timing and care. At Ommegang we place the same emphasis a farmer has for his crops into the creation of our beers. Grains of Truth is a testament to the craft and care of farming, from which our farmstead-brewed beers benefit greatly.

Brewed with balance in mind, Grains of Truth reveals a smooth and creamy mouthfeel with light toastiness and gentle sweetness. Bright amber in color from the mixed malts, the beer is balanced with delicate hopping to counter rather than overpower the malt profile.

Adoration

Ommegang Adoration, brewed in the authentic style of Belgian winter, or noel beer, is dark, malty and assertively spiced.

Adoration is best sipped before a roaring fire. It would also be a tasty accompaniment to dark roasts and wild game. Even at 10% abv, the beer is well balanced and not at all hot or fiery. The dark malts give it lush, malty flavors and aromas, complemented by the five spices, including coriander, orange peel, mace, cardamom and grains of paradise. Hopping is modest, as befits such a beer.
